What makes Via Vita special in comparison to its competitors in the market?

Andrea Grandville: We believe our edge lies in offering authentic Italian food combined with a relaxing Mediterranean atmosphere, seen in our interior décor. Our objective is to offer a friendly, welcoming and warm family-style atmosphere while combining this with true Italian flavours, allowing our guests to truly experience the simplicity of traditional southern Italian food.

Mario Elmir: It is in a business tower, and it's surrounded by residential towers, so the strategy behind the location, interior design and menu at Via Vita was to target all individuals looking to enjoy and immerse themselves in the real Italian experience – business people looking for a quick bite to eat with friendly service, couples and groups, and families with children, thanks to the playground next door.

How do the front-of-house and back-of-house teams support each other?

Andrea Grandville: At Via Vita we are all one big team, one big family. So we support each other in any way possible. We do daily briefings and trainings before and after service.

Mario Elmir: It is very important for both teams to support each other. ‘Teamwork and respect’ is the motto at Via Vita. There is great communication between both teams.

How do you ensure the outlet is busy and profitable?

Andrea Grandville: From the kitchen’s side, quality and consistency is top priority, as well as creativity and originality. We like to experiment behind the scenes in order to truly offer an unrivaled dining experience when it comes to the taste buds.

Mario Elmir: We believe the key to this is providing consistent, high-quality food, but also quick, friendly and reliable service. We want our guests to feel like when they are at Via Vita, they are at their home away from home.

What are the biggest business challenges you face?

Andrea Grandville: One of the biggest challenges we face is to find and source consistent products, especially when it comes to fresh vegetables. We really take great pride in the quality of our food and so we are very specific when it comes to the quality of our ingredients.

Mario Elmir: Dubai is a melting pot of flavours, there are many dining outlets and the number of restaurants is increasing on a yearly basis, which of course makes the competition high.

What does the future hold for Via Vita in the region?

Andrea Grandville: I believe in quality and not quantity. We’re focusing on Via Vita in Dubai for now. But our family is so hard working and driven, and creates such a positive and uplifting work atmosphere, that we are sure there will be opportunities in the future.

Mario Elmir: We have great plans for the future, however, for now we are focusing on Via Vita Dubai and ensuring that we give our customers the best we can offer in food and experience, truly making Via Vita a home away from home.
