The Royal Atlantis Resort & Residences has revealed ‘Dinner by Heston Blumenthal’ as the first named restaurant to open within the property in 2019. With restaurants in London and Melbourne, the Dubai restaurant will be the third outpost of the culinary concept developed by the chef who has won Michelin stars.

Dinner by Heston Blumenthal will include a dedicated bar, two outside terraces and a private dining room. The restaurant will offer contemporary dishes inspired by historic gastronomic recipes dating back to the 1300’s.

"I am truly excited about opening in this incredible location," explained Heston in a statement. He added: "It is not often that an opportunity in such a perfect space comes along. The backdrop is outstanding and the views of the Dubai skyline over the Arabian Gulf are quite unique. Ashley [Palmer-Watts] and I are looking forward to creating something quite special for our guests to enjoy."

The idea behind ‘Dinner’ stemmed from Blumenthal’s fascination with history and gastronomy, which was triggered in the late 90s after reading a 15-century manuscript known as The Vivendier. The book spoke of a dining experience full of playfulness and theatre, as well as intriguing ingredients and recipes. Soon, historic inspired dishes appeared on the menu of The Fat Duck in Bray, United Kingdom.

Finally, n January 2011 ‘Dinner by Heston Blumenthal’ opened its doors under the leadership of chef director Ashley Palmer-Watts. The two chefs created a menu inspired by the tastes and flavours of Britain, from the farmers’ table to the royal courts of England. ‘Dinner’ offers highly modern dishes inspired by a gastronomic insight from Medieval (c.1300) to Victorian (c.1800). The restaurant won two Michelin stars in 2012, and almost five years later a second Dinner opened in Melbourne opened and won a stream of accolades.

The Royal Atlantis Resort & Residences will offer 231 luxury apartments comprising two, three, four and five-bedroom residences including Skycourts, Penthouses and Garden Suites, ranging from 1,400 to 17,000 square feet as well as 795 rooms and suites. It will be located on the crescent of The Palm next to Atlantis. The resort will feature a rooftop infinity pool suspended 90 metres above The Palm.
