Home-grown and independent F&B brand Baker & Spice is set to enter a new area of the hospitality industry by taking over hotel F&B operations.

Director of operations Andre Gerschel revealed to sister title Caterer Middle East that the brand is set to operate the entire F&B of two hotels: one in Jeddah and one in Dubai.

“This is different from our normal projects, which is just a restaurant. For this one, we are doing the entire F&B of the hotel,” commented Gerschel.

This will include the conference space, co-working space, in-room dining, as well as boardroom space for corporate dining and business lunches.

He added: “I think that it’s going to be a very successful venture for us and I’m really excited about the hotel company that we’re going to be partnering with in that particular region.”

Gerschel asserts that it’s not just about handing over work for the project, but the sustaining of the brand ethos. “We want to make sure that everything is up to quality, that our partners strategically understand that no matter what, we don’t compromise on ingredients and we don’t compromise on people. If those two things are understood we are excited to do excellent work with people.

“It took us a long time to find the right partners that understood that when we say ‘local, organic, fresh, home-made’, those are not just tag lines. It’s in every single thing that we do, whether than means how we upholster our chairs using local leather or the types of glass we re-use, or the vegetables from the Farmer’s Market that we do every Friday. It’s tough to find somebody who wants to be a partner in that labour-intensive process.”

Gerschel concluded: “We have referred to it internally as a ‘manchise’ because it’s a management agreement and franchise agreement. And what we’re definitely looking to do is expand in the region.”
