Popular Dubai restaurant Zuma has continued to diversify its healthy-eating options following the success of its Ebisu set-lunch.

The Ebisu menu, which includes palate cleansers and detox options, has been a success for the restaurant and its executive chef has introduced the outlets most requested signature dishes into the menu.

Zuma executive chef Colin Clague said: “The lunch menu has been such a success we decided to increase the range of options, particularly as the weather warms up in Dubai.

“There are many lighter choices like the seabass sashimi salad with ume boshi dressing.”

Other dishes added from the à la carte menu include crispy fried squid, stir fried beef with sweet chilli sauce and salmon terikayi; marinated black cod served in the form of gyoza dumplings, will also feature as a starter on the healthy-option menu.

The Ebisu option consists of miso soup followed by three courses of 16 options, including Zuma’s maki rolls and vegetarian and salad dishes.

Ebisu Express has also been launched giving busy businessmen and women the chance to enjoy a quick set-menu for lunch.
