After initial ‘credit crunch’ panic at the start of the year, the F&B industry seems to be cautiously settling down, with a confident 26% even lifting their recruitment freezes this month.

Ingredient prices seem to be stabilising, looking much the same as last year. Meanwhile F&B footfall remained positive, with 52% saying business in May had been fair or excellent — not too far off last month’s 60%.

Interestingly, 39% of respondents said the majority of their business had been made up of corporate or event bookings, compared to 22% seeing business mainly from the tourist sector.

But far and away the most important market for outlets still appears to be regulars, with 48% citing them as their primary customer base.
