Interesting to note the comment about English cuisine since 20 to 30 years ago. I recall in 1980 that cuisine minceur arrived in the UK and people assumed that this was in fact nouvelle cuisine rather than one version of it, (using one or two of the 10 principles). It was also known as Lean Cuisine because the idea was to produce a healthy version of traditional French cuisine by substituting unhealthy ingredients, for cream read yoghurt, butter exchange with oil, etc. Anyway, my point is that perhaps we need to make the healthier eating side of current culinary innovation a bit more explicit. Not sure if Lobster Thermidor Omelette is an example of healthy eating? Best wishes with the new restaurant.
