Lorraine Sinclair has joined Fairmont Dubai as the new executive chef and will be responsible for the downtown Dubai property’s entire culinary operation including 10 dining and entertainment venues.

Sinclair brings more than 20 years of global experience to this position, beginning in 1988 with an outdoor catering company and later taking on roles within various British establishments such as the George Hotel Stamford and the Alexander House Hotel in West Sussex.

Taking her first foray abroad in 1999 to Manama, Bahrain, she was involved in the design and management of a number of concept restaurants. In 2002, she left the Middle East for East Asia and joined the Lotte Hotel Seoul, reportedly the largest five star hotel in South Korea, as chef de cuisine and sous chef.

Executive chef positions soon followed beginning with Moevenpick Hotel Istanbul in Turkey, Langham Place Hotel Mongkok in Thailand, HSBC banking offices in Hong Kong and The Grand Tarabya Hotel Istanbul where she was a member of the hotel’s preopening team and was responsible for menu engineering, budgeting and recruitment and training of all culinary staff.
