What is unique about Stratos and how does it compare to its competitors in the market?

Stratos was conceived with the foresight of not having any direct competitors. It is an all-encompassing venue, which caters for a multitude of different individuals — whether you enjoy leisurely afternoon tea, the finest meats and fish in the market, or sipping expertly-made beverages to lounge beats. It is a culmination of all of these that give us our USP; add the rotating 360°-view and we have a venue in the UAE market that is unrivalled.

Stratos is the only lounge bar and grill that offers spectacular 360° views of the capital. As far as comparing it to the rest of the market, Stratos focuses heavily on quality products whether it’s the china, glassware or produce and has sought out to only have selected the highest quality. We have never compared Stratos to any other venue as we believe it’s truly one of a kind.

How do the front-of-house and back-of-house support each other?

Both support each other by behaving as one team, with a clear goal of delivering on the potential of the restaurant. Communication and support is imperative — from commis to waiter right up to chef de cuisine to the restaurant manager.

The great thing about doing an opening is that you don’t have the mentality of front or back-of-house; you are working together to bring to life something special. When you share this experience as a team, it’s all hands on deck to ensure we all succeed together.

How is the pricing strategy justified?

Through constant evaluation of the outlet’s needs. Every new venue has an element of Darwinism. As the outlet evolves, so will its products in accordance with the regularly changing needs of the market.

Buying and selling a product at the right price, training our team to understand how to maximise the yield out of every item they work with, and finally, giving the team ownership of their venue.
