The owner of the recently launched Pollo Pollo restaurant in Dubai has revealed that he anticipates more outlets opening in the next few years.
In an interview with Caterer Middle East, restaurateur Ali Sidani revealed: "Pollo Pollo was built to be franchisable. This will be our flagship venue from which we hope to expand into other locations in the GCC."
He added that while he is currently working on expansion plans, no more outlets are set to launch in the immediate future as he wants to fully establish the new Peruvian restaurant before moving forwards with his long-term vison for the homegrown concept.
The casual dining restaurant opened in October 2015 in Umm Suqeim, billed as the first "authentic Peruvian pollería in the GCC", with chefs, ingredients and rotisserie ovens from Peru.
The Latin American cuisine has proved popular in the region and Dubai alone is due to host a total of 14 Peruvian restaurants by the end of 2016.
Sidani predicts that consumers' appetite for Peruvian food will remain strong, stating that the cuisine's wave of populaity is similar to the global demand seen in the past decade for Japanese cuisine, particularly sushi.
“The multi-influences to the cuisine make it very popular; it’s influenced by the Spanish, the Chinese, the Japanese and the Europeans, so it’s a very rich cuisine – from seafood, to poultry, to meat, to vegetarian,” he added.
Native Andean influences are also an important part of Peruvian cuisine's unique DNA.
