Upcoming Burj Al Arab restaurant launch, Nathan Outlaw At Al Mahara, is due to open on September 24, and reservations have opened for the new restaurant.

British chef Nathan Outlaw will be in Dubai for the restaurant’s opening week, from September 24-October 3. Overseeing the restaurant in Dubai is head chef Pete Biggs.

Preview details of the menu at Nathan Outlaw At Al Mahara have now been revealed. According to a statement by the hotel, most of the dishes on the menu have been created by Outlaw, "especially for the Burj Al Arab".

Outlaw himself commented: “My style of cooking is one of simplicity but with complex flavour combinations, using top quality local, seasonal, responsibly sourced ingredients.”

Dishes on Outlaw’s menu for the Burj Al Arab will include lobster risotto, crispy oysters with caviar (pictured), and sticky toffee pudding.

Outlaw’s lobster risotto recipe was originally developed as a method  of using less expensive lobsters, since the “standard size” specimens were not in Outlaw’s price range as a 24 year old chef. “That experience defined the way I think about cooking. It taught me to use entire crustaceans, or the whole fish to reduce waste and keep the entire cooking process sustainable,” Outlaw commented.

Outlaw’s sticky toffee pudding, which also has something of a story behind it, is in fact the recipe of the chef’s eleven year old daughter. “My daughter won the Sticky Toffee Championships with it in the UK, so I’m very proud to have it on the menu.”
