Baklava with camel milk. Baklava with camel milk.

Located at the Grosvenor House Dubai Marina, Rüya, a restaurant specialising in elevated Anatolian cuisine, will celebrate UAE National Day on December 2 with an Emirati-inspired dessert.

Camel milk has been an essential ingredient for centuries in UAE dining culture. In order to commemorate the national holiday this year, Rüya Dubai has created a baklava with camel milk ice cream dessert.

Executive chef Colin Clague commented: “Camel milk was and still is an important element of Middle Eastern cuisine. Back in the day, camel dairy farming was the only alternative to cow dairy farming with the latter requiring large amounts water. Especially in such dry regions of the world, camels seem to be one of the few accessible sources of dairy produce.”

Available exclusively on December 2, guests can sample this version of a traditional Baklava with Turkish tea.
