Pedro Arceyut, executive chef at La Ville Hotel & Suites City Walk Dubai, Autograph Collection, Marriott International
Pedro Arceyut joins La Ville Hotel & Suites City Walk Dubai as executive chef from Qatar where he held the position of executive sous-chef at the Marriott Marquis in Doha responsible for the management of 14 outlets. Arceyut was awarded the Marriott Global Raising Star award in 2013. Prior to that, Arceyut worked as cluster executive sous chef across the Renaissance City Centre, Courtyard by Marriott and Marriott Executive Apartments Doha where key highlights included catering for over 30,000 people at Red Bull's first ever FlugTag event held in Qatar; taking part in the Qatar Food Festival 2012 and 2013 and managing the culinary execution of 'Dinner in the Sky', a seven-course dinner served at 40 metres above the city.
A graduate of Florida Culinary and Le Notre Culinary Arts, West Palm Beach as well as completing studies at the French Culinary Institute in New York, Arceyut first landed in the Middle East in 2002 to take up the position of chef de cuisine at La Parrilla, Jumeirah Beach Hotel, Dubai which placed in the World's 50 Best Restaurants list during his time there.
In 2004, he returned to his native Central America where he held a number of roles including Latin speciality sous chef at the Four Seasons, Peninsula de Papagayo Costa Rica, executive chef at Restaurant Dali, Guatemala City where he was responsible for planning the menus for the International Olympic Committee whose delegates included European Royalty and the committee's president, and executive chef and food & beverage manager at Marriott-Barceló Hotels & Resort, Guatemala City. 2011 marked a return to the UAE and a new role as executive sous-chef at Rocco Forte Abu Dhabi before moving to Doha, Qatar and finally back to Dubai to head-up the new culinary department at at La Ville Hotel & Suites City Walk Dubai.
