Dimitris Fatisis is the new executive chef for M Management Company.

What attracted you to the role at M Management Company?
It’s a new established company consisting of a group of high-calibre executives who have owned, managed and operated food and beverage outlets for many years and have done it successfully. Elia Greek restaurant and The Music Room are multi-awarded venues and considered as staple institutions here in Dubai. The company recently opened two other new concepts: Nola Eatery & Social House and Mythos Kouzina & Grill. This is an exciting new challenge for my career and, with the rapid evolution of hotels, restaurants and nightlife scene in Dubai, there is huge potential to grow the company and I want to be part of that growth.

What knowledge do you bring to the role?
I have 13 years of international experience with a strong background in Greek, Spanish, French and international cuisine combined with a great knowledge of new and classical techniques. Having worked at some award-winning restaurants in reputable hotel chains like Hyatt Regency and The Ritz-Carlton taught me many lessons on how to operate kitchens and F&B outlets. I want to bring the management style I developed during this experience to the company.

What are you most looking forward to as part of your new role?
To share my knowledge, passion and love for food with the team while learning about the different cultures I am surrounded by. I am also extremely determined to continue the success of the company, bring more awards and of course keep my staff happy and motivated.

How do you intend to make the M Management concepts more profitable?
I am not here to change the concepts, as I don’t believe they have anything missing. They are absolutely great the way they are. But I do want to focus on ensuring the consistency and this is how we will maintain our reputation and attract guests, and that will lead to greater profitability for the business.

What exciting things can you tell us about what you’ll be doing?
We want to continue growing the presence of Greek food in the region — that has been the goal from the beginning when the company opened Elia. Mythos’ popularity has been growing rapidly, making Greek food well recognised and appreciated in Dubai. We also want to promote how casual licensed restaurants with ‘made from scratch’ menus are needed, and this will be the company focus.
