07:30am - After waking up, I start my day by listening to inspirational Thai songs and melodies. This gives me a motivating punch right at the beginning of the day.

08:00am - It is the time to prepare breakfast, especially my favourite oats and honey dish. I enjoy watching news on TV and surfing the internet while having breakfast.

10:00am - I head over to the office. This is the best part of my job. Before stepping into the kitchen, I check office emails and plan for the day.

10:45am - I reach Benjarong’s kitchen and get ready for the team briefing that lasts for 15-20 minutes.

11:00am - We start the mise en place, allocating the work amongst the team members. The mise en place exercise is followed by a quick briefing with the service team to ensure seamless communication and workflow once the restaurant opens.

12:30pm - The action begins: Benjarong opens for lunch.

03:00pm - I finish off my work for lunch service, and then visit the executive chef in his office to discuss operational matters regarding my kitchen.

03:30pm - Go back to the kitchen to check for the stock level of different food ingredients and accordingly place orders with the hotel’s purchasing department.

04:00pm - Time to relax. I work on a break shift. After having my cup of tea at the hotel cafeteria, I head over to my accommodation to rest for a while and to recharge my batteries for the evening shift.

06:00pm - The evening shift starts. We go for a quick briefing and then followed by mise en place.

07:00pm - The restaurant operations commence. Usually, it is busier over dinner than lunch. Time flies by so fast that we even don’t realise.

11:30pm - It is the time to sign off for the day. After changing the uniform, I visit this neighbourhood supermarket to get my daily groceries. If I am lucky, I find some cats on my way back home. I always make sure to purchase some tuna to feed the cats.

12:00am - I return to my accommodation, and check social media updates on Facebook and Instagram.

12:30am - Off to bed and prepare myself for another exciting day ahead.
